I made some red Thai curry with eggplant and chicken which turned out delicious but coconut milk is insanely high calorie. Are there any good substitutes? Someone suggested Greek yogurt or whole milk but but I assumed it would curdle if used in the same way. Also general curry thread if you have any recipes or suggestions.

Why would you avoid fat calories? Those are the best kind. You want MORE fat. It fills you up best and you'll eat less in the long run. If you're truly trying to limit calories the smart way is to load up on fat. You'll find yourself snacking far less.

not really. the taste and texture of coconut milk is pretty much crucial to Thai curry. you could substitute regular milk or yogurt for the creaminess (they won't curdle as long as you temper it, indian curries use yogurt for example) but it just won't be the same. you could sub half the coconut milk for broth maybe. but idk, I'd recommend just making it normally and just not eating it that often if you're really worried about the calories. the coconut milk is really what makes it special.

Subbing partially for broth doesn't sound like a terrible idea. Would obviously lose some of the creaminess but that's inevitable

As others have said, you need the coconut milk for it to taste that way. You could try chicken in dry red curry paste, for a lower calorie alternative. Gets pretty fucking piquant though (but I love it). You could use aubergines I should think but traditionally it's fine green beans, sometimes with a fried egg on top.

You can buy "light" coconut milk in cans. They're more watery though, so your curry will be more soupy. Personally, I would just use normal coconut milk if this is a one off thing you are making.

You can't really substitute coconut milk. Also "light" coconut milk is just a meme where they've taken out some of the fattier milk (cream), which is basically what you need, to make the curry creamy. What you can do though is use a little of the coconut cream instead of oil, to fry your meat etc. and leave out the cooking oil.

Sadly there isn’t really a good substitute for coconut milk. The way I deal with this is just to not eat coconut milk based curries very often. Kinda sucks because they are so delicious, but you can make room for them as long as you don’t eat them all the time

There is a cool trick where if you have a can of coconut milk that is 500 calories and you don't want to eat 500 calories you can use less than the whole can.
