Chef Wang's a good guy, although I find his recipes a bit one note and hard to reproduce without a restaurant kitchen setup.

90% of this dish are in the cooking technique and quality of the chicken. The recipe itself is quite simple and he posted variants of this tons of times. Just this time with a silkie chicken instead of a regular chicken (or rabbit, or bamboo rat, or giant salamander)
Honestly I find his other videos where he cooks outside with his uncle more interesting.
Tried getting a bit into his restaurant review videos but he focuses a lot on restaurant operations and economics.
