Hey /ck/ Does anyone know the recipe for Chinese duck sauce. My favorite duck place in China town closed due to covid. I know one of the ingredients was Hoisin sauce. I have tried to recreate it at home unsuccessfully. So if any of you anons ever worked at a Chinese restaurant or just know the recipe I will forever be in your debt.

Duck sauce isn't Chinese. It's bullshit made up for American Chinese restaurants, like General Tso's chicken. It's just corn syrup and apricot flavoring or any of hundreds of other similar combinations that the lardasses at chinese buffets can't tell the difference between.

If it's the dark sauce, just search any recipe for kecap manis and it's pretty much that. If it's the radioactive orange gloop, I don't know and frankly I don't care to.

Plebbit has a more detailed post (https://www.reddit.com/r/chinesefood/comments/1j4hkab/im_looking_for_some_traditional_sauces_for/mgadkr3/) but I doubt any of these are being served in the US all that frequently.

Ingredients

▢ 2 teaspoons sugar
▢ 1 ½ tablespoons hot water
▢ 3 tablespoons apricot preserves
▢ 1 salted pickled plum
▢ ½ teaspoon liquid from salted pickled plum jar
▢ 1/8 teaspoon soy sauce
▢ 1/4 teaspoon rice vinegar

Instructions

In a small bowl, mix the sugar and hot water until the sugar is dissolved.
Add the apricot preserves.
Remove pit from the pickled plum and add to the bowl.
The plum is very soft and should fall apart.
Then add ½ teaspoon liquid from the pickled plum jar, soy sauce and rice vinegar.
Mix everything together with a fork until the duck sauce is well-combined.
Let the sauce sit for 5 minutes and mix again.
