did you just chop up the eggplant and add sauce and cheese then bake? i've never seen it with pieces like this before, just the sliced breaded and fried. i love eggplant parm but it's kind of a lot of work to do that every time so i might enjoy this with bread for something easier.

next time you can just cook it down. that's the most important thing when it comes to cooking sauce, it's the consistency. don't feel like you're overcooking anything, just cook it more.
