or vegetarian beef substitutes. they can be okay especially in something heavily flavored like chili but desu i'd probably rather just have more beans.

don't even need to complicate it like that, just look up vegetarian chili recipes and there are tons.

OP, just pick one that looks good and follow it, it's not rocket science. or, if you have some degree of ability in the kitchen (which for some reason I doubt), read a couple of recipes and synthesize the best parts. I guarantee you, whatever is overwhelming you about recipes isn't actually that bad. you're just psyching yourself out.

Easiest way is use tofu instead of ground beef. Maybe add vegan sausage for extra pizzazz. Chili spices is basically plants so that remains the same.

idk but I would incorporate dried mexican chilis like guajillo / arbol / whatever
you toast them and then soak them
rick bayless has lots of recipes / videos with these
I'd use something like that as a base instead of the white people recipes that mix a bunch of canned vegetables together

Just sub the meat for mushrooms and/or tofu.
Chickpeas, lentils and TVP are also acceptable additions.
I've done fried tofu chili before and it was legitimately good.
Don't let the retard brigade get you down. YES, chili IS technically a beef stew, but you can still make a really, really good vegetarian chili . . . If you know how to cook.

But you're posting on /ck/ asking for basic bitch advice, so it's pretty apparent that you can't. So just get a can.

It's pretty simple -
Required:
+Chili (powdered, canned, or fresh)
+Beans (pick whatever, canned or dried)

Optional:
+Onion, diced
+Garlic, minced (or powder)
+whatever fake vegan cheese shit you have
+additional seasoning - salt, pepper, etc.
+Tofu
+tomato, diced or pureed, plus some paste
+corn

Chili really refers to the spice which is the "feature" of the stew, and there is no point splitting hairs over meat vs. beans because it was always a poorfag meal, so beans belong in it.

An argument could be made that the defining factor of the stew is the spice combined with meat, but semantics are dumb anyway and everyone knows what the fuck you mean if you say you are making chili with beans.

I just made a batch of chili with tofu that I crumbled with my hands and it worked out quite well. It looks a bit weird to have white chunks in the chili (plus I used my immersion blender to thicken up the liquid and ended up with very small tofu particles that look extra weird) and it tastes ok (the tofu taste is masked well by the chili spices) but this slop looks pretty unappetizing but tastes great and I feel great after eating a whole bunch of it. Next time I'll blend before I put in the tofu to fix the suboptimal optics.

You're thinking about cooking all wrong. Think about it more like art or science. Chili is essentially a tomato based curry with pinto beans. So what are the essential ingredients? Fat, tomato, beans, chilies for flavor, and a thickening agent for the gravy.

In traditional chili ground beef or pork provides the fat and some basic flavor. These things are essential and so you'll have to find a substitute for vegetarian chili. Butter can add fat, and vegetable paste/soy sauce can add a little of the missing flavors. Diced or cubed potato can add some missing bite/mouth feel.

To make the chili, start with your fat, sauté your chosen veggies (onions peppers garlic whatever) salt it a bit, after that's looking good add some cans of diced tomatoes. After that's looking good season it with onion powder/garlic powder cumin etc, then add your cooked beans. You can go with cans or if you feel like fucking with it made dried beans before hand. Let that slowly cook together for a while seasoning and tasting throughout.

That's it. Make it a few times and you'll know what you like and get a lot better at it. It's hard to fuck up and there's a ton of room to practice.
