cooking the sea robin i caught when i went fishing yesterday
sous vide at 131f for an hour & put them ontop of latkes with a hit of ricotta
do you guys ever catch & cook your own fish?

i grated a potato washed it out with water, drained the water(and repeat the washing/draining 3 times), then put the potatoes into a rag/cloth/whatever & tightly squeezed out all the moisture.
mixed in an egg, spices, dash of vinegar, anchovies(because i was topping it with fish), a small shallot, and then i added breadcumbs until the texture changed for it to become easily formable into a patty. cooked on medium/medium-low for about 15 mins i think.
and yeah it was very cripsy, and stayed crispy for a long time. this was my first time ever making these so i just got lucky with getting it right

there's bones in the spots that every other fish has them, just avoid them.
i didnt get any bones from the filets i made. i just go carefully and feel for bones while fileting it

what are you talking about? ive had a cup of milk with fish countless times. are you lactose intolerant or something?
i actually didnt have milk this time, i just said that because it's what i would've had if i was drinking anything with it. sometimes i mix in kahlua with my milk. its delicious

i wanted to cook it to 131f but you need 145f to kill the parasites i was seeing(image related). the only other ways to do it are freezing it, but most freezers arent strong enough to kill them, or to hold it at a lower temperature for a longer time. sous vide does this perfectly

Tonight Iโ€™m cooking up some grouper I caught. Iโ€™m going to do a crushed almond and Parmesan crust. Depending on the fish, my favorite ways to prepare it is civeche, sashimi, or empapelado. I also prepare lobster a couple of different ways.
