I want to dunk on you but it's not even possible to get something for 1200/mo here. Looking right now, the lowest in my area is 1800/mo for an absolute shithole in-law unit.

Honestly, swap that old coil shit out for a modern range and oven for like 1-2k and stick a hood vent over and it and that shit would be perfectly livable. Maybe upgrade the sink faucet to have a spray handle for a few hundos and some do it yourself work and you'd be set. Rest is tolerable.

Even induction is better than electric coil shit. Though I guess since you rent you can't swap shit out to fix all that busted 40's shit.

Are you house poor? That seems like way too much to get ahead and save a meaningful portion of your income for retirement.

I know some people who suffer from lifestyle creep and can't leave stressful jobs cus of it.

If I get fired or burned out, and leave work, it's no issue cus I can just cruise on savings I've accumulated from low expenses, and my low monthly expenses.

a 500 sq.ft. 1bd 1ba apartment bottoms out at ~2500/mo here. I tolerate the higher rate because of the apartment itself, the location, and the fact that the utilities here are cheaper than in nearby areas (they have lower rent, but the utilities makes it a wash).

single-family homes are also very expensive. condos bottom out at ~1.4mil, townhome and actual houses at ~1.7mil (usually for that price, the home needs a lot of work or is in a bad area though).

I actually save quite a bit, but probably never enough to own a house *here*. Because cost of living is so high, my salary is also pretty high. income-expense ratio is a little worse than it should be, but I'm saving more than most in gross dollars. If I lived and worked somewhere with a more normal cost-of-living, I'd have a lot less saved.

Someday I'll move and live like a minor lord.

after mixing and kneading you need to ball it up and let it rest 30-60mins for the glรผten to bind and toughen up, and then you roll it out and cut it. BUT after the dough has toughened it's nearly impossible to roll it out by hang, which is why they have those posta presses. you need to really press it thin and then you can cut it any way you like, if you want 1 1/2" thick nuder that's great but make sure they're rested until toughened and then rolled thin

I hate electric coil stoves. you accidentally drip ONE drop of whatever you're cooking on them, and now you have to deal with it smoking forever until you tediously scrub it until all trace of the burned food is gone. and even then it still smokes.
