Industrially rendered tallow is devoid of basically any pleasant flavor. Same goes for lard. That said, home-rendered tallow and lard aren't much better. They smell a little like whatever it came from but tallow doesn't taste like chuck roast and lard doesn't taste like bacon.

Truth is that people are susceptible to influencers. When their favorite creator on instagram tells them to cook with tallow because it tastes better, crisps better or is more digestible than sneed oil they get captured and believe it even when it's not actually true.
