>Scanning the pasta section at the store
>See can of marinara sauce for 2 bucks.
>"It can't be very good for only 2 dollars, but maybe..."
>Check ingredients. They're basic real food ingredients, with nothing weird added.
>Decide to give it a shot.
>Make pizza.
>The sauce is great.
>"Holy shit, I found a hidden gem. Only 2 dollars for great sauce."
>Return to store a week later
>Want to try the spicy marinara this time.
>It rings up for 8.49. EIGHT DOLLARS AND FORTY NINE CENTS
>Realize I've been bamboozled. That the regular marinara had been reduced in price, and the pasta is sauce is normally expensive.
>Remove the sauce on principle. No way in hell I'm paying 8.49 for a damn jar of sauce.
Too good to be true, sadly. I still got the other reduced price marinara though. I doubt any will be left by the time I return.
If they sold it for like 4 bucks, I would still not like it, but I would understand. However, 8 dollars for a jar is fucking robbery.

That's about what it costs for good sauce nowadays unless you wanna spend all day (and 50% of that price on quality ingredients) making your own. Personally I would rather just pop open a jar and have good sauce ready to go so I can focus on the other aspects of the meal.

Marzano tomatoes regularly go in sale for under a dollar a can. When they go on sale just buy like 10 of them since they have a very long shelf life. You don't need to buy the massive cans for feeding an extended family of 10 people.

I don't care what they think it costs. My purse strings say "no" to 8 dollars a can. If they want my money, then they'll have to find a way to get cheaper ingredients. Honestly, all food is too expensive. The prices inflating unnaturally fast. So basing your idea on what the greedy businesses are artificially inflating their prices at, doesn't prove that the sauce is actually as valuable as they claim. They're all in cahoots.

What you're doing is like buying that ground beef that's already shaped into patties, it's just stupid. I make my own dough. The actual making process only takes minutes. But then I have to wait for it to rise, which takes hours. And even then, the better dough needs to be refrigerated. So it actually takes between 3 and 24 hours in order to get a decent dough.

But yeah, going to the pizza restaurant costs like 15 dollars a pie. Making my own pizza costs like... I dunno? 3 bucks each? I've never done the math before. But it's waaaaay cheaper.

>so why can't you make a pizza sauce
Why make the sauce when it's jarred sauce is cheap and easier?

Adjust everything to taste with each batch and it'll last you about a week. You can sub in and sub out other shit as you want to adjust to taste. It's that fucking simple. I followed the recipe from a youtuber on making marinara. It just involved 3 garlic cloves, half an onion, a quarter cup of olive oil, and a 28oz jar of crushed tomatoes. The longest and most involved part was cutting up the onion. But the sauce that resulted was no shit, absolutely fucking amazing.

Pizza dough takes about 20 minutes at minimum to rise, you can skip that step entirety with some dough mixes especially depending on the yeast you use.

>Pizza dough takes about 20 minutes at minimum to rise
I use Fleischmann's active dry yeast.(as opposed to instant rise yeast) And it's never risen in 20 minutes. It takes about 2-3 hours for the dough to rise. If you want to use instant rise yeast, good for you. But I prefer the slower acting yeast. And it takes hours for the dough to rise properly. If you're impatient, then it will only rise slightly, and you get a worse dough. You have to be patient and actually wait for it to rise all the way. It gets quite tall and sticky when it's finished rising.

>Well it obviously fucking isn't if you're bitch ass can't afford an $8 jar
but it was only 2 dollars reduced. That's a good deal, considering how good the sauce was.

It's how my Grandma made her sauce. And hers was the best. I've since looked up how to make sauce. And many places tell you to simmer the sauce for hours for best results. The places that tell you not to simmer, are just trying to tell you the quickest cooking time possible, because they know that long cooking times scare visitors away from their websites. So they push lower cooking times to increase visitor retention. Duh.

Anyone with an actual old recipe will tell you that you need to simmer the sauce.

>not mad, just calling out your bullshit
Well first of all, you ESL, saying something takes "all day" is an idiom that means it takes a long time. Not necessarily that it takes a literal whole day. Some people believe it takes longer than 4 hours to get the sauce right. But others say about 4 hours is fine. Regardless, those upper ranges are still a different realm than the one you're in. With the 15-45 minute times that some of you have suggested in this thread.

So even though I interjected with a 4 hour times, I'm still suggesting a completely different level of simmering. A level that you're ignorant to. The fact that you think suggesting 4 hours is a "trust me" statement, and before that, you asked in naked disbelief why anyone would simmer for so long, just goes to show that you never encountered anyone who suggested it in the past. And that exposes your ignorance on the topic. Ignorance can be forgiven, since we all learn things at different times in our lives. But you are arrogant for how aggro you entered the conversation. Acting like huge know it alls, and insulting people out of the gate.
You INTRODUCED yourself into the conversation by either calling the anon a bedridden polio victim, physically unable to perform simple tasks. Or by calling him a scooter ridden seven hawking.

So you're the one who introduced your shitty fucking attitude to the thread, while simultaneously exposing how ignorant you are. Don't then act surprised when you're called an arrogant cunt. You should actually fucking apologize.

add a can of tomato paste
caramelize it a little bit
salt to taste
add pasta water
add pasta

delicious. that's like 50 cents worth of ingredients, and takes about as much time as it takes to boil water and cook pasta.

Well I just disagree. I think you can make an ok sauce in a short time. But if you want to make it truly ascendant, then you need to simmer it for a long time.

No, you retard. The video even briefly explains this. Marinara is a tomato-forward sauce, so you don't spend hours simmering it. If you simmer a tomato sauce for over an hour it just loses its fresh tomato flavor and becomes more like tomato paste. We would do something like this for a bolognese, not a marinara.

Tomato paste and water is how commercial sauces are made, even your fancy sauce. This is how you make a tomato sauce in 15 minutes instead of 45 minutes. Even just using canned tomatoes will instantly elevate it above anything you buy in a jar.

2 glasses into the pot, and walking to the kitchen every so often to get lost in the remaining sauce, and stir the marinara.

You can cut back on butter and instead add a broth. Occasionally I'll use a bone broth when I get a rotiserrie chicken. With the absence of butter tomato paste now becomes rather necessary however. Marcella is very boomer coded, very, very old style of cooking. But it is a fundamental basis from which you can alter and expand your sauce library.

I fail to see how the making of tomato paste matters here.

>>21423652
Right, because they don't simmer it into a paste. It's not rendered down, and then rehydrated with water. It's simmered to the consistency of pasta sauce. If it was made into paste, and then rehydrated with water, it would have to be specified on the label, like in pic related.

nice find. People often throw away their empty sauce jars/bottles. Like, I don't have a toothbrush holder, I have a jar. I have a change jar by my door. There's 2-3 jars of coldsteeped tea at all times, and at least one jar of homemade pickles. I'd probably given several away in the last few weeks. When I need replacement I will find a deal on sauce and eat pasta all weekend. It's a simple system
