When I lived in Southington, CT there was a small Italian deli called Ragozzino's that did "stuffed breads". They were kinda like calzones but without cheese on the inside and no sauce except in the parm ones.

They were all right but the meat quality was iffy in some of them. You gotta use good meat.

Brown up some crumbled breakfast sausage, roll out some yeast bread dough lay down a hefty amount of mozzarella cheese, the sausage, more cheese on top, then fold the bread closed around the filling and bake.
