This is a top tier sandwich meat. What’s the catch? Why shouldn’t I eat this in all my sandwiches?

Liver is pretty high in Vitamin A I think? And too high of levels for some people can lead to really bad health side effects.

Additionally eating organ meat like that (for some) can lead to conditions like gout. Plus its high in salt and who knows if thats even bad for you, but if you had a couple of those sandiwches per week and otherwise at healthily and drank a bunch of water and similar good things you'll be fine.

You ever try it with some raw onions, capers, and fresh dill? Some like pickles to combine all of those flavors Quite a sandwich.

It's even better fried up and ate with eggs and rye toast. You can slice it, or dice it. Better than bacon or breakfast sausage honestly.

It's deliciously fatty. Great with mustards. My problem is I usually can't eat a whole log in time. I like it, but it's just too much in a package. But it's like $2/lb so even if I throw half away it's still fine. The dog likes it, but it makes him shit soft serve, so it's only really good for hiding his pills in. If he eats more than a couple spoonsful it's a problem.

I have no idea what 45g of it looks like. And before anyone starts a metric versus imperial shitpost, I don't know what 1.5oz of this would look like either. I can't tell if thats 1 half inch slice, or half the tube.

It's not that much, it's two slices from their sliced package and for comparison it's about the same weight as two slices of cheese. I can't really find a great pic but this one is probably close to show what it'd look like on bread.

You're fine then. Because its not like people eating this stuff are eating other foods high in Vitamin A, plus with all the sodium in it plus onions and pickles, its likely going to act as a mild diurretic causing you to pee out most of it.

I said earlier "for some people" as well because some races do very poorly with moderately high amounts of Vitamin A for example, while other races could eat liver at every meal and not be affected. Look up Douglas Mawson and Xavier Mertz during the 1911-1914 Australasian Antarctic Expedition.

It does, although it's diluted in liverwurst like this. But a serving of beef liver is like 600% RDA of vitamin A. It's also really high in copper even moreso which can be toxic as well. If you're drinking milk or eating eggs and salmon other times too it's probably too much.

It's kind of hard to overdo it with most foods though because you'll probably just get sick of eating it before getting into dangerous territory unless it's something like polar bear liver. Supplements are usually a bigger concern.

And it makes sense that some people might tolerate it more than others. I know I read that some people convert the beta carotene in plant foods into usable vitamin A better than others, I would imagine the ones who do that might tolerate preformed vitamin A in animal foods less.

Vitamin A is also fat soluble so you don't really pee it out. That's partially why it can be so toxic. Other water soluble vitamins can be toxic but generally only from supplements and not from any foods.

Pan fry it in butter until brown and serve it on a bun with chopped onions which have been cooked in Worchestershire sauce until soft but still with a bit of crisp.

It's bad in the sense it dehydrates you if you have too much. Super easy to fix by drinking water though. I find if you listen to the body, it will yell at you to either drink water or eat salty snacks if either is out of whack.

If you're at least thinking about it and can be ready to detect when your levels might be getting too high you're smarter than half the world. Variety is better anon, liverwurst is an excellent sandwich but maybe once the tube is done give a week's break to try something else you really like.
