But a serving of beef liver is like 600% RDA of vitamin A. It's also really high in copper even moreso which can be toxic as well. If you're drinking milk or eating eggs and salmon other times too it's probably too much.
It's kind of hard to overdo it with most foods though because you'll probably just get sick of eating it before getting into dangerous territory unless it's something like polar bear liver. Supplements are usually a bigger concern.
And it makes sense that some people might tolerate it more than others. I know I read that some people convert the beta carotene in plant foods into usable vitamin A better than others, I would imagine the ones who do that might tolerate preformed vitamin A in animal foods less.
Vitamin A is also fat soluble so you don't really pee it out. That's partially why it can be so toxic. Other water soluble vitamins can be toxic but generally only from supplements and not from any foods.
