Ham is great for protein, bacon is great for flavor, but all pork toppings have sodium nitrite.
Chicken is also great for protein, doesn't have as much flavor.
That leaves ground beef.

I used to get pissed off when my ex-husband wanted to pick the pizza flavor for dinner takeout, because I just knew he would have a dumb idea that wasn't fitting an Italian mood, ugh, he'd say the stupid hamburger pizza and well, it was pretty tasty. The local place that made it was using cheddar blends, diced tomato and onions, and to replace the missing meat flavors of simple unseasoned hamburger crumbles, they sprinkled tons of red pepper flakes (was very spicy). The pickles were like having banana peppers on your pizza. It was fine. We got it probably 3 times before I just put a stop to pizza from that restaurant. I pretended to want coal fired style, where there was no bbq chicken or other alternative non-italian choices on the menu.

Italian Sausage or bacon

The grease and porcine element is needed, as is mild spice, or in bacons taste the sharp saltiness/smokiness that replaces the spice.

I imagine salami could work well too, if it was thicker cut slices
