It's literally just Anthony Bourdain, and he only pooh-poohs it because you can't mince garlic to your preferred size/texture with a press as opposed to a knife. It's a valid criticism that applies to lots of gimmicky tools like the garlic press but doesn't matter if you're not a gourmet chef or just want garlic paste.

Dunno about mortar but a microplane creates a much smoother garlic paste than a press. Releases the flavor way better.

i always say it's one of those time saving tools that doesn't actually save time, it just moves it around. if i'm in big hurry to do my prep for some reason i'll use it, but cleaning it is a pain. i also don't peel the garlic when i use it, which i thought everyone did but apparently not. makes it super fast to use but more time consuming to clean

In most applications, smashing it with the side of a knife then giving it a few rough chops works just fine little to no effort required. If garlic needs to be finely chopped then take your time and do just that. If it needs to be grated then do it over the grater. Press is just half assing everything while not saving any appreciable amount of time and effort.
