If you use American cheese, yes. It has emulsifiers to keep the oil in the cheese from separating. Even just 1 or 2 slices combined with other cheeses will emulsify them too. But

I bought some velveeta to make mac and cheese and it tastes just like craft singles. I assume you can just use kraft singles or some other american cheese plus a bit of milk to water it down. If you use straight cheddar or something it will probably be a massive pain in the ass to melt.

You don't drain the water, you just boil it down enough to achieve the desired consistency, then melt the cheese in that starchy water. Again, it's not great, but it works.

I do that but I cheat and add some sodium citrate. Mixing american cheese/velveeta in with the other cheese does the same thing. Been using an ultra-rich turkey broth I made after last thanksgiving as the base liquid as well. Shit's delicious.

nowadays I just do it like this, boil noodles in water, strain most of the water leaving just a little in there, then start dumping cheese in there. If I'm feeling spicy I'll make a white gravy, melt cheese in there, and then dump the noodles in that instead. Either way I typically use a bunch of different types of cheese for it for best results.

Make it the same as you would Kraft mac and cheese (with butter and milk) only use shredded cheese instead of an artificial cheese packet. Don't add too much butter unless you like gritty cheese sauce though. 1 tablespoon per pot, and just a splash of milk.
