My favorite local chinese restaurant had 2 menus (they were hong kong style), and the patrons were locals who were chinese as well as a serious takeout business. I did occasionally order from the 2nd traditional menu, usually the eggplant and bitter melon choices, but most of the weird items were the various dozen or so soups. I don't need fish maws in my soups, personally.
