What types of cuisine do you think are underrated? For me, Puerto Rican food is better than almost every other Latin American food besides Mexican

That looks like fancy Puerto Rican food. Every PR restaurant I've been to is a hole in the wall that sells all kinds of delicious fried things from a glass case on the counter to go with the rice and beans and mofongo.

I think Indonesian is underrated. Especially because many of the favourite dishes in other SE Asian cuisines originated in Indonesia, but they don't get the credit! They get overshadowed by Thai and even Malaysia.
Taste Atlas ranks Indonesia #7 in their top cuisines of the world 2025. The highest ranking Asian country, and above French cuisine. So maybe things are changing

Turkish Cuisine also gets overshadowed by Ethiopian and Moroccan (at least where i live in the states). There's nowhere near me that serves lahmacun and i'm starting to think i might just have to go to Turkey to have it

You can make that argument about all the countries most renowned for food. China, Mexico, France, Italy, Nigeria, Vietnam, and India certainly. Perhaps you could argue some middle eastern cuisines are "unique," but they all seem like variations on the same themes which is a detriment.
Japan and Argentina perhaps might be the only countries with a distinct cuisine where regional variation seems minimal? But I suspect that has much to do with those countries geography.

Maybe I am ignorant, but can you walk us through what those regional variations are? I've traveled in Argentina fairly extensively and the variation was minimal.
I know that Japan has claims to "X city has the hyper specialized dish!" but from what I can tell it's fairly samey, really just bragging about making the same dashi everywhere else does but with a different fish as the base. Ive never actually been though.
