Roast them (they're better chargrilled for the smoky flavor, but it stinks up the place, and you risk burning them if you're not careful), peel the skin, pass them through a sieve or food mill (get rid of the seeds and tougher veins), then mix with salt, oilve oil (and/or tahina), lemon juice, and either garlic (Med style) or diced onions (slav style).

italian, greek and mediterranean ideas, asian, japanese or thai, indian simmer sauce

This is my usual suggestion ^. Half the time I add them to BBQ grill for a steak or chicken night on the grill, just broshed with olive oil on the surfaces, likely halved down the middle or thick slices along with bell peppers and sweet onions, til grill marked and soft. Balsamic or lime juice, salt and pepper or herbs, depending on the other menu themes. Grilling already, so fill up the blank spaces out there. It'll be a side that night, or choped into tomorrow night's dinner. 2 for 1. It could go onto pasta, into a grain bowl or pasta or tossed salad idea, or to top pizza.

cube, put with tomatoes and zucchini and toss w olive oil, salt and crushed red peoper, cooke the hell out of it until its a chunky paste, and eat on bread. if the chunks bother you, you can puree it too, stream in olive oil til its a consistency you like
