It's akin to going to PF changs for chinese food in the US, where you know the clientele wants white meat chicken, not thighs or chicken feet. Is it better, quite possibly, it's more like it's elevated and thoughtfully not offensive. You won't get a homemade soup dumpling with gelatin rich stock, but you'll enjoy your evening, especially if you pounded the pavement on your feet as a tourist all day. Or, it's like going to Mexico City and dining at Pujol or some other Michelin starred place, and thinking locals would even want to eat ant eggs anymore, or ancient grains. with foam on top and a housemade cocktail. When you dine well in other countries, you have to consider your own mood and mood of your dining companions and your own culture's standards, too. If you visit a country like Costa Rica, you'll just want something different occasionally. There is only so much traditional food a sane human can do 3 meals a day.
