I swear Italians have the palates of 5 years olds. Everything they make including Pasta and Pizza tastes so immature, bland and unvaried. If you remove Pasta and Pizza, their level of cuisine will be that of Eastern Europe( Balkans will surpass them). I wonder why

I saw some michelin star restaurant video how to make tomato sauce. the boomer literally just cooked tomatoes in a pot. and they were acting like it's the best sauce ever.

I'm looking more into cooking Italian food and most of it is in the ingredients more than the methods, half of the recipes I find use some hyper specific variety of whatever that you can only get at Guido's market stall on the hill in Calabria. It makes sense that you would think proper Italian food is bland since it's basically impossible to get half their shit elsewhere in the world, and that one stupid ass ingredient probably makes all the difference.

eh, depends on the dish. most of the ones i can think of either don't use super weird ingredients or you can substitute them for more ubiquitous ones without much trouble.
i'd argue it's more about ingredient quality/freshness.
can't imagine someone living in alaska getting their hands on fresh tomatoes, even if it's not the "san marzano di mamma tua" variety the recipe asks for
