The most versatile ingredient, it isn't used universally as eggs, however it debunks lemon/lime and honey as the ingredient that bridges well along with any food, desserts, chicken, beef, pork, fish, ice cream, it also makes great infusions and combined with tea adds deep taste.
Not a single dish doesn't go well with ginger.

I generally dislike ginger and cuisines that use it as a base aromatic. I like ginger beer and gingerbread, so I guess I really only like it in sweet contexts. I don't like curries or asian stirfries because of the ginger.

I like ginger a lot and prepare a lot of stir fry dishes, but i can never add it to broccoli, cabage, mushrooms, green peas, cauliflower or leeks..
But i can mix any of those vegetables with bell peppers or zucchini.

I don’t like the overpowering taste of ginger in dishes so I do not use it for recipes that don’t have the word ginger in the title.

The vast, vast, VAST majority of them have no ginger. It's probably wypipo stirfries that use it all the time, since they like to add things where they don't belong. It's really weird. Fatmerifats famously hate vegetables but you can't get a single stir fry noodle order in Fatmerica without 37 different vegetables in it and only two slices of meat.
Meanwhile, you get beef fried noodles in HK and you get noodles, beef, onion, chive and, like, one broccoli leaf. That's it.
