The actual answer, speaking as someone whose wife is Georgian, is to hold them by the top, turn them upside down, bite into them and slurp out the soup, then eat the rest of the dumpling (except the top, which you don't eat because it just tastes doughy).
I'm also not sure why /ck/ seems obsessed with khinkali, they're relatively mundane dumplings. Probably the least interesting part of Georgian cuisine.
