They're not a mashed potato extrusion like alphabet or smiley face "fries." They're just potatoes. Potatoes cut with the same crinkle cutter as shitty-ass crinkle cut fries, but potatoes nonetheless. Just cut down across the potato's length and roll the potato 90° with each cut. That's it.

haven't had alphabet, think it's a homemade one for kids. crinkle can be really good, similar to steakhouse fries but i think the crinkles give more salty surface area per bite, they're like fast food french fries with more potato stuffing, so more satisfying and filling. really good for dipping.

OP, I think matchstick is a term for knife work, not fries. They're call "shoestring" fries, and they're my favorite type for a steak frites. Pic is the cuban version of bistec palomilla covered cilantro and onions, then literally a mountain of fries.
