very much overexposed in the public eye at least here in the US, BUT it also has a TON of depth and is a contender for best cuisine worldwide alongside italian, chinese, dixie, and japanese.

anywhere bordering the gulf of mexico, the mediterranean sea, and the east asian coast + islands are the best cuisines in the world. Simple. Spanish, Italian, French, Croat, Greek, Turk, Israeli, Palestinian, Egyptian, Nigerian, Moroccan, Floridian, Cajun, Dixie, Texan, Mexican, Cuban, Chinese, Japanese, Vietnamese, Korean, etc. These are easily the best of the best.

I honestly think new age Mexican food is contender for GOAT cuisine ATM. Traditional style Mexican is a little bland, just owing to the poverty effect, but it's undergone a mini revolution in the last 50ish years due to American influence that I think has really propelled it from great to incredible.
