Though I eat pies all year, I particularly pair key lime pie with summer menus when I'm grilling, because I like to slice it cold right from the freezer. It's very easy to bake 2 or 4 at a time in the oven to set them then freeze them well covered in foil. Perfect batch cooking recipe. Last summer I tried the Atlantic Beach version, the saltine-crust version of key lime and it was interestingly kind of salty, and reminded me of the pretzel crust on a strawberry pie.
I'm also doing lots of pina coladas, fruit margaritas and mango daiquiris this time of year, due to their good pairing with the pool weather. Frozen chunks of ripe mango is how I handle the tree dropping ripe mango fruit all at once. Mango quick bread is nice for breakfast. Pineapple upside down cake seems more Fall to me, but I do make the buttery goodnesss most in Summer, and tuck pecans into the brown sugar step around all the pineapple rings.
