Fat and membrane. Can render it for tallow or grill/broil it and eat it if you like the crispy fat on a steak.

There was membrane mixed in with the fat but I wasn’t completely sure what it was. The fat-cap on this sirloin wasnt as easy distinguished. I can tell when its fat, but I have never seen so much membrane. This tip roast had last fat than the other ones so it confused me. Yeah, next time I will render it to fry the steak in.

The membrane is made of collagen. May have an unpleasant texture but it's a ready source of hydroxy proline

I wouldn't use it for fonds or broths as it will add no flavour but just fat.
