I want to learn to become good at restaurant style cooking but I also want to do it on a monetary budget (not time budget)
Any suggestions of where to get started?

The advice I got was learn to slice, dice, mince, etc. and practice on carrots and potatoes.
I would add to that breaking down chicken, fish, and beef. While learning that learn wet and dry brines and seasoning combinations and stick the landing by learning poaching, searing, roasting, frying, and grilling.
