How "traditional" is IKEA cafe food? Is it americanized slop like "Chinese" food you find at a mall food court?

It's traditional, just very curated.
I.e what they have is done roughly the same way as in Sweden but they struck massive swathes of more representative dishes from implementation.
It's a little as if an Indian restaurant rather than adapting curry to be palatable to Western tastes instead didn't carry it at all in favor of things like butter chicken and samosas or a UK restaurant HEAVILY leaning into pot pies and full English breakfast at the expense of mushy peas etc.
The preparation of the dishes is representative.
The selection is not.
