if I've got peppers, onions, mushrooms, asparagus, broccoli, i put them directly on the greased baking sheet and put the chicken skin side up on top of whatever i had, roast at 425º for 20~ mins, flip chicken over, broil until other side looks good
pan frying it's just lemon pepper like mom used to make

Best chicken seasoning is stock. You boil it in water with vegetable creating a soup
and then eat chicken with it

My favorite seasoning for (whole) chicken is as follows:
Dry Rub (on and under the skin)
>salt
>black pepper
>paprika
>cumin
>chili flake
>garlic powder
>coriander powder
Compound butter (under the skin)
>unsalted butter
>grated garlic
>ginger
>jalapeno
>salt
Goes great with rice and chickpeas

Dry rub

>Garlic powder
>Black mustard seed
>Onion powder
>Fenugreek seed
>Smoked paprika
>White & black peppercorn
>Oregano
>Thyme
>Corn starch
>Salt
>Pepper

Mortar pestle the whole spices. Mix together. Rub into chicken. Let sit for at least 15 minutes to hydrate. Peanut oil in pan and pre heat (just enough to saute, not pan fry). Cook until temp is 160. Rest 5 mins. Enjoy.
