For jams, the simplest recipes are almost always the best. Half fruit, half sugar, and a few dashes of lemon juice heated until it boils in a pot comes out amazing every time. I'm partial to strawberry and blackberry preserves myself.

Most fruits already contain enough gelling agents to attain a gel-like consistency in jams. I wouldn't ad any unless you want a jello-like consistency or are specifically making jelly.

I've always had a soft spot for apricot jam, simply because we had a giant apricot tree in our garden when I was a kid.
These days I old-man maxx and like bitter orange and spiced plum jam a lot.
Also chili jam, but that's less used as a jam and more as a topping for cheeses.
