It's usually ground meat with breadcrumbs and eggs like a meatball like the other anon said, also a condensed ketchup topping is pretty common. It can be alright if made by someone who can cook but most of us here probably remember our family's shitty version and aren't interested in making it. A decent gravy does a lot for it, as does omitting or replacing the ketchup topping

I was told by some whore on the internet not to use a meatloaf pan and just sit it on a baking sheet. I like the way it came out. I use a HFCS free barbecue sauce instead of ketchup.

No. Meatloaf became a meme because of sitcoms, portraying it as a bad, dry dish, but it isn't. Even a mediocre meatloaf is good. I made a turkey meatloaf with cranberry glaze last christmas and it was great.

I make homemade meatballs, and reserve about half of the meatball mix to make into fist-sized single-serving mini-meatloafs. A meatloaf is only as good or as bad as the seasoned meat/egg/breadcrumb mix it's made from.

I do meatball recipe + paprika, feta (cheese).

yeah i do that too. it also makes cleanup much easier. i get a piece of aluminum foil large enough to cover and fold over the baking sheet, then put that into a loaf pan. put the meat in the pan to shape it. lay it on the foil on the baking sheet. cook it like that. then fold and pour the fat and juices from the meatloaf into a small bowl to use for a gravy

i had bad meatloaf and hated it because of that. becuase of how my white boomer mother cooked it

and that was literally it. no other seasonings like parsley or thyme, no carrots, no garlic, no worcestershire, nothing. it was the blandest shit imaginable. oh, sometimes she would put a layer of cheddar cheese in the middle.

Man, back in CT there was an old place that served some excellent meatloaf with fried onions, gravy, all the trimmings. Good stuff. They closed down for good some years back. I miss it.

>diced onion
>bread crumbs, I tend to use the generic italian breadcrumbs
>egg or two
>salt pepper, some wostershire, soysauce works fine too
>some other herbs...I think I used thyme
>mix all that shit in a bowl then form the log, place in a baking dish and cook till finished

Same, but only if it's my own homemade recipe. I'm very picky about who makes it, and how it's done. Mine has a whole pint of chopped mushrooms in the blend, and lots of onions, celery, peppers. Also, it's mounded in a big oval on a sheet pan, not in a loaf, because I want maximum crustage for glazing.

Heinz chili sauce, dark brown sugar, worchestershire, apple cider vinegar and more of the same spices that match the chili sauce recipe (allspice, cloves, paprika, cayenne)

I use the bread heels whirled up in the mini processor (you could grate it too). A couple glugs of milk when you add your eggs to moisten the bread. But, the real moisture comes from the chopped mushrooms, onions, celery and peppers, which holds onto the juices as it bakes. I use leanest sirloin 90/10 and it's never dry.

because people cook them like shit. i despised broccoli growing up. turns out when the only way your parents make it is to put it in a casserole dish with water and microwaving it with no seasoning at all, it tastes bad. same with brussels sprouts.

when i learned about oven roasting vegetables, especially cruciferous ones, now i love them. hell, its the same with green beans. my parents always got frozen ones, which is fine, but they cook it with no seasoning at all no wonder i didnt like them. now, pan fry them after cooking with olie oil, salt pepper, redd pepper flakes, lemon juice, i could eat a pound of them

never had lima beans, heard they are horrible. but i still hate peas. absolutely hate them. but i like split pea soup
