I only use bay leaf powder in my cooking. I find the flavor to be stronger in broths and sauces, and it makes a great inclusion in meat rubs, fish seasoning, and on roasted vegetables.

My neighbor has a bay laurel tree but the fresh leaves are wayyy too strong. Very potent menthol flavor that will overpower any dish.
I think they need to be cured/dried for a time before they're good for cooking.

This Indian joint near where I lived would add crushed bay leaves and they had such a sharp but tasty flavor. I don't know how to recreate it.
