Just try everything until you find something you like. Cook a new fish every week or something. Something might surprise you. It'll be your weekly food autism thing, it'll be fun. I like nice thick cut of tuna, and I cooked up a river trout I caught one time with some wild onions I found and that has to have been one of the best tasting fish I've ever had. I'd also look to see if you can get some fresh sardines. They aren't little bitty things like you get in the cans. I bought some frozen ones once and just baked them with some vegetables. That's a damn good tasting fish.

Salmon being red in color doesn't give its flesh inherent qualities. It's red because they sequester a red pigment in their flesh from their diet. This pigment does not affect flavor or texture whatsoever, salmon and trout just happen to store it. The more of the pigment the salmon eats, the redder it gets. Wild salmon gets the pigment from shellfish, farmed salmon eats feed with artificial pigment added (which is why they look redder in the store).

So flesh color is a terrible way to categorize the quality of fish, since 99.9999% of fish are "white fish". There are fish with white flesh that are just as fatty and smooth as salmon, or even more so. You'll have to try many different species to see what you like. It's impossible to tell by flesh color alone.

There are lots of good ways to make fish broth or stock without making it too overpowering. Just boil some fish heads and/or shell from shellfish. Always keep the heads and shell from shrimp, crayfish etc, when you peel them. You can boil them later to make some amazing broth or stock.

I like 2 fish because they taste the least fishy to me. One is salmon and the other is tuna. Get yourself a nice thicc tuna fillet and decent blackened spice mix. Rub the fish, cook the fish, eat the fish.

This is a good fish too, but for me it doesn't taste like much of anything. The lack of flavor, even a fishy one, throws me off from eating this fish. I have maybe 4 fillets in my freezer that aren't doing anything but getting frost burn. They fell off a truck so I don't care much about it.
