I use vegetable oil by default because i am broke as fuck. But avocado oil is the best for searing because it has a neutral flavor, high smoke point, and less of the bad stuff from overprocessed seed or veggie oil. Ditto for coconut oil, which is also good for making chocolate dip since it hardens at room temp. Olive oil should be used raw in salads or lightly sauteed dishes to preserve the flavor. Butter is great but again too easy to kill the flavor and smoke cooking. Duck fat and schmaltz are delicious and great for browning potatoes in or adding flavor to rice like mexican or persian rice. I have some mustard oil which i use for indian food, it has a very interesting pungent smell but idk if i can actually taste it in the final dishes because there are so many other flavors.

Pork lard is not much more expensive if not the same price. I buy 500gr of italian pork fat for $1.25 but I'm in Eastern Europe.

Beef tallow is more expensive but if you render it yourself it's not that much money. But it smells alot while you are doing it so I get why people wouldn't do that, especially if they don't have a range hood.
