Why do some people put onion peels in their stock? I'm talking about the papery outer skin. Onion is a root vegetable right? Doesn't that mean dirt, germs and bacteria? Onion peels in my home go inside the compost bin.

There's flavor in onion peels and also in all sorts of parts of veggies that are normally thrown out. It's good to use everything for stock

The peel is extremely healthy actually. But you don't wanna use it if it's not bio cuz of pesticides.

i do everything, if it came from a vegetable or an animal i save it for stock in a big bag in the freezer.
garlic/onion roots/peels? freezer
chicken/pork bones that i finished gnawing on? freezer

There's the outermost layer that's dirty paper and should be discarded, but the first layer of the onion itself underneath the paper is often tough and bruised by shipping to a degree that makes it unsuitable for most cooking.

But that layer is fine for stock.

Onions are one of the only things that are still dirt fucking cheap. Just use whole onions in your stock.
