I mostly do just cow milk feta mix it avocado/lemon/pepper flakes and olive oil and white pepper.

Sometimes I'll put smoked salmon on it.

2. Make an actual sandwich that normally uses mayo
3. Spread mayo on one piece of bread and avocado on the other
4. Shove the entire thing up your ass and make a bacon egg and cheese sandwich

Patience, grasshopper. That's all to know. Buy 4-5 of them of a spectrum of various ripeness, and hope you get 1 daily. For big batches, same strategy, but I buy a bag of them, say 5 in there, and then wait to use them until perfect. I'll push that mexican night a couple of days sometimes til it's right.

OP, I do avo-toast very boring. It's got to have squeeze of lemon or lime juice, and then it's matched with a sprinkle of spices. Either tajin and cilantro, or za atar blend with olive oil. The lemony thyme heavy za'atar is my favorite. It's got to be on heavily toasted bread, from pita or sesame bagel, to sourdough to a crusty french roll.

With skill you can just tell when they're ready by appearances that almost brown change, ie without bruising and manhandling them. Of course, you can cut around any internal brown spots, oh well. Be gentle!
