They suffer from lactose intolerance. I went to a really lovely korean cafe and bakery in NYC's ktown, and the recipes were classically french, but with dairy substitutions such as the sweetened bean pastes. A for effort, just 2nd tier no matter what.

Milk candy is delicious, and I adore the honeydew Milkita the most. But, it's a miniscule amount of dairy, which is all you see in asian cuisine.

Cheese has almost no lactose, it gets broken down by enzymes and drained off during the cheesemaking process. Most people can consume a little bit of lactose especially when paired with food even if they're lactose intolerant, so you'd have to consume like a quart of whipped cream to maybe have an issue and by that point you'd be more likely to get an upset stomach from all the fat first.

Lactose intolerance mostly just matters when drinking fresh milk, everything else is less likely to cause problems.

Tried the red bean paste bun for the first time. It was very disappointing after how much it was built up in anime. Just a very grainy mildly sweet paste.
I'm sure part of it had to do with it being made in a factory and shipped halfway around the world and sitting for weeks to months.
I bet a fresh warm one would taste better, but I'm still searching for that asian treat that really hits. Everything but raman so far has been disappointing.

Honestly, take it from a demichino: red bean paste is garbage unless homemade. It's easy as fuck go mane from scratch, too, and no: it doesn't specifically have to be red mung beans. You can use red kidney with little, if any at all, discernible difference.
I make it vegan, not for any particular reason other than we've always got coconut oil in the house and seldom ever have lard. Just boil the beans, press them through a sieve to deskin them then cook in a pan with a little coconut oil (or lard), sugar, water and a pinch of salt. That's literally it. I have no idea what the shopbought version of something so simple is so awful but it is.
I spread that shit on toast, stuff it into crepe rolls, stuff it into compressed rice (lepet isi selai kacang merah), eat it as a layer in shave ice or just eat with a bread roll. It's good shit homemade. I use vanilla sugar in mine, which makes it uniquely delicious but do what you want.

Asians make good bread, I like its subtle sweetness and fluffiness, but yes, their desserts, for the most part, absolutely suck. Jap desserts are terrible (niggas eating beans lol), all of SEA eats soup (lmao) for dessert and Koreans have some of the worst most flavorless pastries imaginable. Chinese make ok ones, the cream stuffed buns are pretty good

Lactose is the sugar in milk, so heavy cream and cheese are safer. Skim milk would make them explode since all the milk fat is taken out to make heavy cream

All Asian pastries are modeled off European ones. Taiwan was a Dutch colony. Hong Kong was a British colony. Macau was a Portuguese colony. Qingdao (formerly spelled Tsingtao) was a German colony. Ever hear of Tsingtao beer? Europeans brought pastries and beer to Asia and Asians loved both.

Melon pan is just normal bread, but the crust is made out of cookie dough, the ones you buy from the store taste like stale bread covered in cookies, it's dry alright.
Ideally you want to make it yourself and eat it fresh out of the oven, then the bread is very airy and practically melts in your mouth, the cookie crust is just there for the initial taste as you bite into it, the bread is what makes the dish, and it will already go dry by the next day so gotta eat it fast.

Bad list.
And if we're allowed hot desserts, I quite like kolak campur. It's a sweet, pandan-flavoured coconut milk soup with various fruits and sweet tubers. It often has banana (pisang), sweet potato (especially purple one; ubi), palm fruit (buah lontar), pumpkin (labu/labu kuning; omitted if using orange sweet potato) and jackfruit (nangka).
Since it's palm sugar sweetened, it's suitable for vegans but vegans are terrible, awful people and don't deserve to eat something as good as kolak.

Understandable.
Normal unsweetened bread goes well with sweet things when fresh, like bread + watermelon is a classic combo here in Europe and using cookie crust is basically the same concept, and it's a more nuanced taste than normal sweet bread that is sweet all around. It has to be fresh though, so store-bought ones tend to suck.
I wouldn't eat sugar cookies on their own either desu

I've always found it rather interesting just how differently the east and west utilize beans. East is mostly sweet in paste form while west is mostly savory such as in chili. The only western bean paste I can think of would be hummus, which is still savory. Pretty neat how much of a difference you can make by just dumping a truckload of sugar into a dish. Like I feel like it should be possible to make a sweet hummus but that also seems extremely wrong.

Thailand has great desserts. Sweet mango sticky rice in season is incredible. The way they eat coconut ice cream is excellent, too. They make a bunch of other ones that I can't pronounce or spell or even really describe that well besides just saying that Thais understand texture in their desserts and use a lot of fun things to chew on. They make this stuff that's basically cold sweet coconut milk with all sorts of "toppings" floating in it and it is awesome.

Cake is overly light, boring, and un-satisfying in 90% of the stores I bought them from in South Korea. All the "frosting" is whipped cream or thinned out urmine.

They made really good chocolate chip cookies and decent fudge brownies in most of the coffee shops though.
