I have far too many thai eggplants. After making a green curry with them I'm out of ideas. Could I make them into baba ghanoush or are they too seedy?

While I've never used them for baba specifically, I've made jeow maek keua, Lao/Isan eggplant dip, which is similar but with a more SEA flavour. Since it works there, I don't see why it wouldn't for baba ghanouz. If it does come across as too seedy, you could always make hummus and mix the two to give it a smoother overall texture
