Yeah. He's an all around master. Plus he's entertaining and encouraging. He teaches well and despite being a master chief, you never feel like he's being pretentious or talking down on you. He's humble and you can learn so much.

theres nothing wrong with having a person on youtube especially a legit chef who can show you techniques to have longer videos so you can see all his process and tricks he uses. pretty much every other youtube cook just shows you doing recipes with very little of the process.

but i would say even though i love him, the unfortunate thing is how he has somewhat complicated and time consuming dishes but they look a lot shorter because he has all his mise en place before starting the video

I do find it interesting that Chef JP does stress using an thermometer gun to tell when his pans have gotten up to temp and he also stresses when you are reheating dishes in the oven there's no point in warming them past 150F as beyond that you are just cooking the dish more than needed and you can't eat anything hotter than that without burning your mouth anyway.

Yeah good point. I've also noticed that JP is very specific about things that are health and safety related. He always stresses leaving a towel on a pan with a handle that gets hot, very on point about poultry cooking and sanitation, teaches safe knife work, etc.

Chef JP is the best. I've made his chicken stock, beef stock, demi glaze, countless chicken and potato dishes, prime rib, and a bunch of his desserts. The strawberry mousse has been my favorite
