I've cooked with and without it and honestly didn't notice a difference. Maybe I'm retarded though

I think of stuff like MSG and Splenda as flavor enhancers and not entirely functional on their own. MSG should be paired with a protein dense item, and Splenda tends to work with carb dense items that don't need to work with yeast. As for fats, just pick a fat that tastes good to you.
I like how they kinda amp up the flavor to 11, even before you add some spices.
