I saw this at the store and bought a bag and threw them in the freezer. I had visions of making some fancy Asian fish thing, fried in a wok or something. Red chili oil and lemongrass and shit.
Months later they're still in the freezer and I'm looking for inspiration.
Anyone use these or anything like it? I'm guessing since they're sold like this they're to be cooked skin on, bones in. I could roast them. Frying would be a mess. Steaming would be gross. I'm open to ideas.

I have something similar in my freezer, different kind of fish but same type of cut. The other day I roasted one in the oven, just rubbed it with some olive oil, thyme, salt & pepper, baked it for ~15 minutes, squeezed some lemon on it. It was pretty good. I was expecting it to taste fishier cause it did kind of smell fishy, but it was actually nice. Only downside were the bones, but they weren't that bad, mostly it's just the spine which will come out in one piece and there's only a few other little bones to pick around. Not like a million little pin-bones.

Just dive in and cook one in the oven so you can see what it's like, then you will have a better idea of what to do with it. I was thinking of making an escovitch style sauce or maybe some kind of stew with the rest of mine.

To make something "asian" you can also also drown it in obnoxious amounts of toasted sesame oil, and if it was normally served hot, serve it cold, or if it's normally cold, serve it hot. That makes it asian. It's eaten with chopsticks. Make sure to squint as you slurp!

Wine pairings? As any child can tell you, all food from the continent of asia goes with "resiling" (make sure to spell it exactly like that). What kind of "resiling", you might ask? Auslese? GG? Kabinett? No no no, I said "resling", I don't know what all those stupid words are. I heard kung fu girl is good. Goes with asian, like I said.

You can also have sake. Anything from asia automatically goes with sake. What style of sake? I don't understand the question. Namazume? Daigin... what? I said sake, no sorry I don't speak chinese.
