It may be approaching medium-rare in the cross section you can see, but was blue in the thick areas. Cold in the middle. Just the way I like it. What a steak it was. The meat sweats and mild sickness passed and now I feel amazing. Even having some cheeses as an after snack.

>>21446430 It's not my personality. I needed it to create the immense appetite necessary to consume an entire 18 oz steak with butter sauce all over it. What the fuck is your issue? Ever heard of an aperitif? That's the alcoholic version of what I did. I'm not some tie-dyed, dreadlocked hippie with weed leaf earrings. It was supposed to read 'bong bowl'. But I was high. I'm terribly sorry that offends you.
>>21446447 The 15 year old meme suggests you're a millennial, possibly mid 30s if not pushing 40. So why are you getting high and eating giant steaks at home by yourself?
>>21446367 Your steak looks good. I've eaten way too many "cowboy" ribeyes while high, 3lbs plus. Good times.

Sides are used to provide variation and to compliment the dish. Youโre just lazy and possibly disconnected from your higher consciousness.

>>21447978 Thatโs strange. My understanding has always been that doneness refers to the reddest part, ie medium rare isnโt rare in the middle. I think itโs a lot better when itโs an even gradient, center being slightly, but noticeably more cooked. Your pic would be tough as shit, while mine would be tender throughout. I let it rest after the sear and cook at a low temp after for that reason
>>21447998 It's not strange. Your image is biased. It declares medium-rare to be "perfect" and "preferred". Disregarded. If people went by your image a lot of steaks would be sent back as overcooked at steakhouses. But you do what you like.
>>21447347 i know no one will give a shit, but I think its fun old movies, and maybe they still do, have symbolism peppered throughout that work on a subconscious level in order to help develop characters, themes and plots this is a great example; john candy is more ruff and rugged, the fire behind him is an open flame dan aykroyd is an uptight asshole, the fire behind him is fine tuned and utilized
>>21447347 >>21448004 this is one of my favourite movies. the bear story is hilarious

>>21448001 Donโt read it, look at the pictures. What would I have to order to get a steak that isnโt 50% well done and raw on the inside? Iโve made those on accident and they sucked. Maybe itโs regional? I end up with the one in my pic at US steakhouses

>>21448001 >It declares medium-rare to be "perfect" and "preferred". That's a true fact. Medium Rare is optimal steak doneness. That said. OP's steak is not Medium Rare. It's borderline blue
>>21446331 (OP) I'm very sparing with shallots for my steaks these days. They're so overpoweringly sweet with the browned butter. But if you're going for an all out rich flavoured ribeye they're amazing.
>>21448012 For ribeye I'd say a medium is almost better. You have more time for all of that fat to render. Though for a strip or flay, medium rare is prefered.
>>21448012 No, that is your subjective opinion, regardless of how many people join you in opining that medium-rare is their favorite. There is no optimal. You can't measure it like you can the efficiency of an engine or something. You like it more cooked than I do, and someone else likes it even less cooked than me. That's how it works, dingus.

>>21448004 You mean that exact frame? The lamp way in the background that you can see over Aykroyd's shoulder? That's surely not intentional in order to subconsciously invoke your theory. Even if the light placement was intentional for lighting and balance by the gaffer and production dept, there's no "symbolism" there. Not in the cinematography of a fucking 80s John Hughes movie. Some movies have done that; not this one.

Looks ruined.
Way too uncooked in the middle. To think I share society with people full of tapeworms and shedding contagious eggs because they eat like this and think it is a preference and not a failure to cook their food.
