You can, they just take longer to cook. If you're stewing them for a while in a soup stew or braise, then they turn totally soft. If you're grilling or sauteing them, they stay very tough and fibrous.

The green part isn't ripe yet. Wait until the green turns to match the white part. Then those babies will be ready. Otherwise, the green is toxic with solanine.

Yes, as it does with basically anything. Should work fine in most places scallions would as long as you account for them being a bit tougher. Honestly, most alium greens work wherever any of them would.

What kind of bad joke is this thread? The green part of leaks play a similar role as spring onions in westernized asian cuisine except spring onions are added as garnish and the green parts of leaks are stir-fried.

well im op and a lot of the information i get is very weird on it. my problem is that i have chives and leeks (i have tasted the chive "leaves" and not the leek leaves...) and a lot of places tell me leeks are not edible and other places say other crazy stuff liek in chives throwing out the white part and im like what. i thought what you said that they serve it whole (chopped up too) in asian cuisine but i just heard so much stuff

Oh, and as for them whole in Asian cuisine, Chinese leeks โ‰  Western leeks. They're different species, Chinese ones being very tender and more closely related to garlic than to leek. The same is true of chive. Chinese chive is more closely related to garlic which is why it's AKA garlic chive. If you want Chinese leek tenderness but more of a Western leek flavour, calรงot is the closest you'll get. It still will not taste like a true leek.

I like those leeks they sell in late autumn, that were hilled, and the leaves are soft and crisp, but not woody.
