Key lime pie is really easy, especially since it has a graham cracker crust. The fruit and also pecan pies are pretty similar to me once you’ve got the crust down

I made scotch pies a lot
They're pretty easy
All you need to do is melt lard in water, add salt to flour and then mix them together when the water is about boiling

Any custard or cream pie (pumpkin, banana cream, lemon meringue, key lime, etc.) should be a good choice. The filling's very easy to make so you can just focus on getting the crust and baking times right. They're easy to know when they're done too - just take them out when you can stick a toothpick in the pie and it comes out clean

This but also fruit crumbles. I know it's not technically a pie, but you can make the topping more like a crust. This way, you can practise making fruit fillings without worry that you'll screw up your shortcrust.
Word of advice, too: despite looking fancier to those who know no better, lattice topped fruit pies are easier to make well than those with a proper lid, they're just slightly more time consuming. The reason they're easier is because with an open top like what you get with a lattice-topped pie, there's far, FAR less of a chance that the filling won't reduce/thicken enough to set and therefore far less of a chance you'll wind up with a soupy mess and soggy bottom

Don't you have to cook the apples for apple pie? Meanwhile for blueberry pie you can just dump them in the pie crust with some sugar and it'll turn out just fine

You just have to cut them up and cook them for a bit, it's nothing.
Blueberries you have to spend 10x the money so its quite expensive, I wouldn't do it for practice

Here's a (translated) recipe for an apple pie from an 1854 cookbook that I use:

>Peel and core a dozen or so wine apples, chop them finely, and stew them lightly in melted butter. Pour in half a glass of wine, add a handful of rinsed small raisins, some chopped lemon peel, several spoonfuls of sugar, and a bit of cinnamon. Cook the mixture, stirring constantly, until it thickens.
>Once the filling has cooled, spread a layer of it over a baked round of puff pastry, cover it with a raw round of dough or a lattice of pastry strips, brush with beaten egg, and place in the oven.

I've never tried an apple pie baked with just raw apple though. Might also be good.

lemon meringue is the classic but its hard to do right.
apple pie is the other one, but its not as good as apple crumble.
thats about it.
family-sized meat pies are a boomer food but they havent been popular in decades.
