Anyone here makes their own pain du chocolatine? How hard is it to make the dough and shape it good?

The dough is tedious but not technically difficult to make. Just takes a lot of patience. It's worth it though

This except "worth it." That's not necessarily true. I wouldn't say it is for me and my family, anyway, but if you don't mind frozen dough or pastry, you can make it ahead of time up to the point of baking, freeze them individually then thaw and proof the night before and bake that morning. We lack the freezer space for as many croissants as would be worth the time and labour so that's not doable for me. Also, it's, like, 30 minutes of work spread across two days, so there's that aspect, too.

Just "chocolatine". "Pain au chocolat" is fine too but could be confused with a standard non-laminated bread with chocolate in it.
"Pain du chocolatine" would be kinda like saying "bread of the wrong-gendered chocolate pastry"

Its only worth it if pain choc is hard to find or unbelievably shitty where you live. The dough is really time consooming so if you have time to burn then go for it, also make sure you use the right butter.
