I think a little balsamic glaze to dip the cheese in, and a little peanut butter for the apples, and you go from reasonable snack to something simply indulgent

I had a friend who would dip those little crunchy pickles into peanut butter
And one of my top favorite sandwiches is a peanut butter with ham and mustard

well based on the OP I thinking something like cheddar, but provolone or dry motz would be good. if you get into softer cheeses you might have to rethink this
