Texas BBQ is mainly known for being a simpler style close to what you described for churrasco. There are other styles of BBQ that do what you say but Texas isn't really known for that.
It doesn't really matter anyway. I doubt most people are eating churrasco that basic. Just like I'm sure a lot of people in Texas add some sauce after cooking anyway. Yeah keeping things as simple as possible can let you show off that you're preparing it really well but you can still enhance food with more flavorings. A competition who can make food with as little as possible just seems silly. Why do you even need salt then?
