It's highly overrated. It's not a bad steak, but it ain't what people pretend. It's the loin version of a chuckeye steak. Chuckeyes are a decent steak, but they'll never be a ribeye. In the same vein, picanha will never be a NY Strip.

That's not what Texas BBQ is. Texas BBQ is mainly known for being a simpler style close to what you described for churrasco. There are other styles of BBQ that do what you say but Texas isn't really known for that.

It doesn't really matter anyway. I doubt most people are eating churrasco that basic. Just like I'm sure a lot of people in Texas add some sauce after cooking anyway. Yeah keeping things as simple as possible can let you show off that you're preparing it really well but you can still enhance food with more flavorings. A competition who can make food with as little as possible just seems silly. Why do you even need salt then?

steak in general is wildly overrated, every couple of years I doubt myself and go out and get a RRRUHHRURRRR STEAK RAW RAW CAVE MAN and a big bold boomer cab from napa

I always end up enjoying the boomer cab but for steak I'm like "that's it?"
