why buy frozen strawberries??? they're peak season right now, and as cheap and tasty as they get all year.

place them on a large sieve as you might use to drain spaghetti on a bowl to defrost and drip
slice with sharp knife into slices so you can see the inner layers and they are reasonably thick and aesthetic
place them on the sieve again and in the fan oven with the door ajar at the lowest setting to dry
after a while pour some sugar into a bowl, layer the slices on top, pour more sugar and repeat until they are drenched in sugar
leave in the refrigerator, take them out, depending on how dry they are you will be left with a layer of strawberry syrup, a layer of reusable sugar and candied or partly candied strawberries, repeat if they are still too wet
remove strawberries, pour off dry sugar, scrape off strawberry syrup into a more convenient cup for storage in the refrigerator
add the syrup and strawberries to yoghurt, or mix the syrup with cream cheese, 1 part syrup 3 parts cream cheese, to make a cake filling and layer the strawberries on top of the cake's icing
