A restaurant should ask its customers how they want their steak - or any piece of red meat -cooked. Sure, there might be several "acceptable" ways to cook it, but that choice should be up to the chef. They know the meat theyโ€™re working with and have been trained to cook it right.
No one ever asks how you want your chicken or fish done, so why should red meat be any different?

I was about to agree with this anon, then I remembered ordering one at some establishment and the waiter saying "chef only cooks this rare". I'm more of a medium-rare / medium. But I agreed. It came out fucking blue. Afterwards I reflected that who is this cunt putting a dish on the menu, not allowing the level of cook on the steak and then getting it wrong anyway.

The meat you braised is "well-done" 10% through the cooking process, what you want goes far beyond doneness temperature and is more about the cook time. It's like people talking about how far they like their eggs when boiled and you walk in like an unhelpful retard and go "how do I boil my eggs? forget it, give them to be well-set in a quiche baked for half an hour".
