A restaurant should ask its customers how they want their steak - or any piece of red meat -cooked. Sure, there might be several "acceptable" ways to cook it, but that choice should be up to the chef. They know the meat theyโre working with and have been trained to cook it right.
No one ever asks how you want your chicken or fish done, so why should red meat be any different?
