I should share my pork breakfast sausage recipe with you, it's a completely different animal and heavily seasoned which is just great. I have some patties of it in the freezer, maybe I'll make my own mcmuffin for lunch. (I don't have any Engish muffins today but I do have some damper rolls which are pretty good)

You want pasture raised, not free range. Free range is a lie and a loop hole they use. It just means they are not in cages, but the chicks are all still crowded together. Pasture raised means they are actually outside, roaming a pasture.
