What do my fellow co/ck/s find to be the best way to make stock? Breaking down a whole baby chicken in a bit and need to start being proactive. I don't have a pressure cooker, but I do have a Crockpot, would crockpot or stovetop be better? Should I roast the gibblers before I simmer them?
Discussions encouraged, I'll post more pics when I break it down, prob 8 PM CST

If you roast it first it takes different. I've done it on the stovetop and it works fine. Chefs say don't add salt to it.

Oh, forgot I was gonna ask that too. No salt? I'm adding mirepoix, should I simmer that in butter first or just simmer it with the chicken?
I was actually a cook for 12 years but I've been working an office job and eating fast food for the past year, I keep second guessing myself and need some reassurance from the boys

I just added everything at once. They say don't add salt because you can just add it when you use it in a recipe.

So how long should it simmer for? I leave for work at 6:45 AM, is the crockpot the best option? Or should I let it reduce a bit? I'll probs be up til 1

Normally I shove it in my ass and leave it there for a few weeks until I can feel the rancid slime dripping out of my shitpussy and pooling in my crusty unwashed Rick & Mortyโ„ข tighty whities, then I pull it out, hit it with the hammer I use to to discipline my testicles with when I've been naughty and require punishment, and rinse it in the rusty old washtub full of algae, dead bugs and rainwater in my backyard. i know you said you don't have one but if you make a lot of stick your should consider getting a pressure cooker cos it is so quick, cheap and easy to make stock in them. just throw everything in for a blonde stock.
